Happy Wednesday guys! Recipe of the day is Leftover Turkey Salad with Carrots, Celery, Apple and Creamy Dijon Dressing.

Leftover Turkey Salad

The Leftover Turkey Salad has become one of my favourite during the months of November/December. It is packed with flavour, super crunchy, healthy and filling. And the dressing is just what this salad needs – creamy honey mustard with a touch of lemon juice.

If you’re not having any turkey leftovers soon :-), pleas try this salad anyway. You can use turkey breast, but any part would work. Cook the meat and slice it thinly, then add all of the veggies, apple and creamy dressing.

You can store it for up to 3-4 days in the fridge. It’s delicious on its own but I also love it in wraps and sandwiches for a more filling an nutritious option. You can also serve it as a side or appetizer, it won’t disappoint. 🙂

What you need:

  • turkey
  • carrots
  • apple
  • celery
  • walnuts
  • fresh parsley
  • Wholegrain Dijon mustard
  • honey
  • lemon juice
  • salt

Here’s how to make this crunchy Leftover Turkey Salad

Ingredients:

  • 200g turkey leftovers, thinly sliced (or grill a turkey breast and slice it up)
  • 1 carrot, sliced
  • 2 celery stalks, sliced
  • 1 apple (Pink Lady or similar), cut into small cubes
  • a bunch of fresh parsley, chopped

For the dressing:

  • 1tbsp Wholegrain Dijon mustard
  • 1tbsp honey
  • 2tsp lemon juice
  • 1tbsp olive oil
  • salt to taste

Preparation:

  • In a bowl, combine all the ingredients together. Whisk in the dressing ingredients in a separate bowl and pour over the salad. Mix well.

Serve as a side, appetizer or main.
