Happy Wednesday guys! Recipe of the day is Bulgarian Red Wine Stew/Винен Кебап – rich and comforting, this stew is like no other. 🙂
This delicious stew is one of my go to recipes once the weather’s changes and the winter coats are out. It’s really simple to make, the red wine gives it a rich and dense flavour and served hot over a bowl of rice is an absolute comfort food. Chilli peppers are a must! 🙂 Also, make sure to use good quality red wine. I know there are ‘cooking wine’ in the shops, which are quite cheap but they won’t give the sam flavour, or any flavour at all.
What you need:
- pork shoulder
- red wine
- brown rice
- tinned tomatoes
- bay leaves
- paprika
- salt and pepper
- flour
- fresh parsley
- chilli peppers
- sunflower oil
Here’s how to make this comforting Bulgarian Red Wine Stew/Винен Кебап
Ingredients:
- 500g pork shoulder, cut into chunks
- 1 large onion, chopped
- 200 ml tinned tomatoes
- 1tbsp paprika
- 3 bay leaves
- 2tbsp flour
- 2tbsp sunflower oil
- salt and pepper to taste
- 300g cooked brown rice, for serving
Preparation:
- Heat a pot with the oil and sweat the onions for 5 minutes. Add pork chunks, season with paprika and cook for another 5 minutes, stirring constantly.
- Add some water, around 500ml or more, mix in the bay leaves, cover with a lid and leave on a low heat for about 50 minutes, stirring occasionally.
- Pour the tinned tomatoes. Whisk the flour with 4-5 tbsp of water and gently stir in the stew. Season with salt and pepper to taste.
- Remove from the hob and serve hot over a bowl of brown rice. Garnish with fresh parsley and some chopped chilli peppers.
