Happy Thursday guys! Recipe of the day is Leek & Sweet Potato Filo pie – topped with eggs and herbs, this is a real veggie treat!
This pie is absolutely delicious for breakfast/brunch and I love the fact that it uses seasonal ingredients. Leek is a favourite of mine, it is absolutely delicious! However, i’m still working on making my kids to like it. 🙂
What you need:
- filo pastry
- leek
- sweet potato
- eggs
- butter
- thyme
- salt and pepper
Here’s how to make this beautiful Leek & Sweet Potato Filo Pie
Ingredients:
- 1 sweet potato, peeled and diced
- 2 leeks, washed and sliced
- 150g filo pastry (more or less)
- 2-3 sprigs of thyme
- 50g butter
- 1tbsp sunflower oil
- salt and pepper to taste
Preparation:
- Start by preparing the sweet potatoes and leek. Heat a pan with some oil and gently cook the sweet potato for 4-5 minute stirring constantly. Add the sliced leek and leave for another 5 minutes. Keep stirring the whole time. When the vegetables are softened but not completely cooked, remove from the hob. Season with salt and pepper.
- Preheat the oven to 180°C. Grease a baking tray with some oil and start arranging the filo pastry. The result should be something like a pocket. Add the sweet potatoes and leek and place in the oven for 10 minutes. Take it out, make small pockets and add the eggs. Throw the thyme sprigs and butter on top. Cook for another ten minutes.
- Remove from the oven and serve hot or cold.
