Happy Wednesday guys! Recipe of the day is Crispy Apple Pie Parcels – fried to golden crispy filo parcels stuffed with apple, walnut and spices filling and served with some melted chocolate, because.. why not? 🙂
These Crispy Apple Pie Parcels are identical to these Crispy Pumpkin Pie Parcels, the only difference here are the apples. They are super crispy and really easy to make. Serve them hot with melted chocolate and vanilla ice cream for an indulgent finish of your meal.
What you need:
- apples
- walnuts
- dark brown sugar
- cinnamon
- nutmeg
- vanilla extract
- filo pastry
- sunflower oil for frying
- melted chocolate for serving
Here’s how to make the indulgent Crispy Apple Pie Parcels
Ingredients:
- 800g apples, grated ( I used Cox)
- 180g dark brown sugar
- 120g walnuts, chopped
- 2tsp cinnamon
- 1tsp nutmeg
- 1tsp vanilla extract
- around 200g filo pastry
- sunflower oil for frying
- melted chocolate for serving
Preparation:
- Heat a pan with a tbsp of sunflower oil and add the apple, spices, sugar and walnuts. Cook for about 15 minutes, stirring occasionally. Remove from the hob and let it cool for a bit.
- Unfold the filo pastry, cut into squares about 10x10cm. Brush the edges with a tiny bit of water and put about 2tbsp from the apple mixture, fold the ends in and roll it out in a parcel. Brush the ends with water again. Repeat until you’ve used all the apple mixture.
- Heat a pan with sunflower oil, for deep frying.
- Cook each parcel for about two minutes on each side until golden . Place on a plate covered with kitchen roll.
- Serve with melted chocolate and vanilla ice cream, best hot. 🙂
