Happy Friday guys! Recipe of the day is Breakfast Potato Chorizo Muffins – quick, easy and so satisfying!
This recipe is perfect for using leftovers – you can use leftovers from your mash or baked potatoes. Also, it’s very simple and calls for just a few ingredients. You can easily make it vegetarian, just skip the chorizo and maybe add some mushrooms. Or why not try adding some grated cheddar. I would normally have done it but my eldest is not so keen on the cheese and specifically asked me to skip it. 🙂 Anyway, these potato bites are super delicious and perfect for breakfast, snack on the go or even as a side dish. Serve them with some tzatziki and enjoy hot or cold. You can keep them in the fridge in air tight container for up to three days. Mine didn’t last that long though. 🙂
What you need:
- Maris piper potatoes
- chorizo
- eggs
- yogurt
- thyme
- bicarbonate of soda
- salt
Here’s how to make these yummy Breakfast Potato Chorizo Muffins
Ingredients:
- 4 large Maris piper potatoes, peeled and boiled
- 2tbsp yogurt
- 2 eggs
- 80g chorizo, thinly chopped
- 1tsp bicarbonate of soda
- 1tsp thyme
- 1tsp black pepper
- salt to taste
Preparation:
- Preheat the oven to 200°C.
- In a bowl mash the potatoes and season with salt, thyme and black pepper. Mix well.
- Add the chorizo, eggs, yogurt and bicarbonate of soda and mix thoroughly. If the mixture is too wet, place it in the fridge for 30 minutes.
- Spoon the mixture into a muffin tray and bake in the oven for about 20 minutes.
- Serve with some tzatziki or sour cream, hot or cold.
