Happy Monday guys! Recipe of the day is Leftover Nachos Salad – a quick and supper yummy way to use up all your ‘Mexican night’ leftovers. 🙂
We recently indulged in an all “‘Mexican’ inspired dinner but it seemed I’ve overdone myself by cooking a bit more than we could eat. 🙂 I made quesdaillas, tacos and a big fat tray of Nachos. 🙂
Well, half of it left, so to balance things out a bit and use the leftovers we had some delicious Leftover Nachos Salads on the next day. The Nachos were made with ground beef, pinto beans, pico de gallo salsa, guacamole and sour cream – absolutely loaded and delicious.
All you have to do is to mix them up with some fresh salad (your choice), add some fresh spices, lime and chillie and voila!
What you need:
- mixed leaf salad/iceberg or Romaine lettuce
- leftover nachos
- guacamole
- sour cream
- cilantro
- fresh lime
- fresh chillies
Here’s how to make this lovely Leftover Nachos Salad
Ingredients:
- 1 Romaine lettuce or mixed leaf salad, shredded
- leftover Nachos (mine were with ground beef but chicken, beef, pork or veggie versions work fine)
- 2tbsp sour cream
- 1-2 fresh chillies, chopped
- a handful of fresh coriander, chopped
- 1 fresh lime
Preparation:
- Break the tortilla chips in pieces and combine the leftover nachos with the lettuce in a salad bowl.
- Drizzle with some fresh lime juice, sour cream and sprinkle the chopped coriander and chillies.
