Happy Wednesday guys! Recipe of the day Is Harrisa Roasted Cauliflower – a gorgeos roasted cauliflower with lots of flavour! 🙂
Last week, we had this wonderful Harrisa Roasted Cauliflower and it was honestly so good that could sub our Sunday roast no problem. 🙂 We enjoyed it with a creamy black garlic aioli I whipped that day. Black garlic is seriously delicious and if you haven’t tried it yet, you’re really missing out, just saying. 🙂
Make sure to add a bit of water in the tray when roasting the cauliflower so it doesn’t burn or get too dry.
What you need:
- cauliflower
- harrisa paste
- soy sauce
- brown sugar
- passata
- garlic powder
- ginger
- cumin
- vinegar
- salt and black pepper
Here’s how to make this delicious Harrisa Roasted Cauliflower
Ingredients:
- 1 cauliflower
- 2tsp harrisa paste (harrisa powder works fine too)
- 3tbsp passata
- 1tsp vinegar ( I used apple cider)
- 2tsp brown sugar
- 1tsp ginger
- 2tsp garlic powder
- 1tsp cumin
- salt and pepper to taste
Preparation:
- Preheat the oven to 170°.
- Mix all the seasoning in a bowl.
- Gently brush the cauliflower with the mixture, making sure it’s all covered generously with it.
- Place it in a baking tray and pour a tiny bit of water so it covers the bottom of your tray.
- Bake in the oven for about 15 minutes, then take it out and brush it with more of the harrisa mixture.
- Put it back in the oven for another 15 minutes. Take it out, leave to cool a bit and brush with the rest of the harrisa mixture.
- Serve hot or cold with your favourite dip.
Enjoy!
I hope you guys love this recipe as much as we did. Stay tuned for more quick, easy and tasty seasonal recipes (more Veganuary inspo, even though it’s nearly February now 🙂 ) coming soon.
