Happy Monday guys! Recipe of the day is Beetroot Cavolo Nero Bites – quick, simple and super delicious small bites.
What you need:
- beetroot
- feta cheese
- cavolo nero
- pine nuts/raw cashew nuts
- Parmesan cheese
- garlic
- fresh lemon juice
- olive oil
- salt and pepper
These pretty bites are so simple to make but so yummy. All you need is beets, cavolo nero & feta. The combination is just perfect and I could have these everyday.
Not to mention the festive season is fast approaching and I’m sure we’re gonna be needing lots of quick, simple and tasty bites to entertain friends, family (fingers crossed! ) and just enjoy some lovely food.
Not only they taste delicious but I think they also look super cute.
Here’s how to make these tasty Beetroot Cavolo Nero Bites
Ingredients:
- 2 beetroots, sliced, about 1/2cm thick
- 100g feta cheese, crumbled
- 1tbsp olive oil
- salt to taste
For the Cavolo Nero Pesto:
- 100g Cavolo Nero
- 30g pine nuts or raw cashew nuts
- 30g Parmesan, grated
- 2tbsp olive oil
- 2 garlic cloves
- salt to taste
Preparation:
- Preheat the oven to 200°C.
- On a baking tray, lined with baking parchment arrange the beetroot slices. Drizzle with olive oil and season with salt. Bake in the oven for about 20 minutes. Leave to cool.
- To make the Cavolo Nero pesto, simply blitz the ingredients together.
- Scoop a generous amount of the pesto and add on the beetroot slices. Finish with the feta crumbs and season with a bit of pepper.
