Happy Monday guys! Today’s recipe is Pumpkin Chocolate Cake with Toffee Sauce – rich and indulgent and so simple to make.
I made this yummy cake for Halloween and we all enjoyed it so so much. The toffee sauce and chopped pecans make such a difference and simply complete this Pumpkin Chocolate delight. 😋
What you need:
- pumpkin
- brown sugar
- eggs
- self-raising flour
- bicarbonate of soda
- vanilla extract
- sunflower oil
- chocolate
- pecans
Here’s how to make this delicious Easy Pumpkin Chocolate Cake
Ingredients:
- 200g self-raising flour
- 3 eggs
- 250g pumpkin, cooked and mashed
- 120g brown sugar
- 120ml sunflower oil
- 1tsp bicarbonate of soda
- 1tsp vanilla extract
- 120g milk chocolate, melted
- 80g pecans, chopped
For the toffee sauce:
- 120ml double cream
- 60g butter
- 60g brown sugar
Preparation:
- Preheat the oven to 180°C.
- In a bowl, whisk the sugar, eggs and sunflower oil and add the mashed pumpkin. Mix well and add the rest of the ingredients, apart from the chocolate – flour, bicarbonate of soda and vanilla.
- Pour half of the mixture into a greased cake tin, then add the chocolate and the rest of the cake mixture on top. Bake in the oven for about 20 minutes. Leave to cool.
- To make the toffee sauce, simply melt the ingredients together and leave to cool down. Drizzle over the cake and sprinkle the chopped pecans.
