Happy Friday guys! Recipe of the day is Quick Prawn Curry – comforting delicious and ready in just a few minutes. 👌
It seems I’ve been bombarding you with curry recipes this week, but hey, it’s national curry week and our family do love a good curry. It’s fragrant, aromatic, heart-warming, quick and easy to make and so so yummy. Also, there are so many versions you can try. There’s nothing like digging into a hot and (spicy for me) bowl of curry on a cold and rainy day. It just brings so much joy. 😄 Or is it just me? 🤣
What you need for the Quick Prawn Curry:
- prawns
- double cream
- onion
- garlic
- paprika
- cumin
- cinnamon
- turmeric
- garam masala
- tomato puree
- black pepper
- salt
- fresh coriander
- lime
- sunflower oil for frying
- basmati rice for serving
Here’s how to make these bowls of goodness
Ingredients:
- 350g raw prawns, peeled
- 1 onion, chopped
- 3 garlic cloves, crushed
- 2tsp turmeric
- 1tsp garam amasala
- 2tsp paprika
- 1tsp cinnamon
- 1tsp cumin
- 1tsp black pepper
- 100ml tomato puree
- 80ml double cream
- salt to taste
- fresh coriander for serving
- basmati rice for serving
- fresh lime for serving, if wished
Preparation:
- In a heated pan with sunflower oil, sweat the onions and garlic for a few minutes. Add all the spices and about a litre of water and leave to simmer for 15 minutes.
- Next, add the prawns and tomato puree and leave for about 5 minutes.
- Remove from the hob and stir in the double cream.
- Serve over a bowl of basmati rice, add some fresh coriander leaves, lime juice and fresh chillies, if wished. 🤪
