Leftover Lamb Kofta Curry

What you need:

  • lamb leftovers
  • double cream
  • an egg
  • breadcrumbs
  • onion garlic
  • paprika
  • cumin
  • cinnamon
  • turmeric
  • garam masala
  • tomato puree
  • black pepper
  • salt
  • fresh parsley
  • fresh coriander
  • lime
  • sunflower oil for frying

Here’s how to make this amazing Leftover Lamb Kofta Curry

Ingredients:

For the Lamb Koftas

  • 400g leftover lamb (I used my roast lamb)
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 3tbsp breadcrumbs
  • 1tsp cumin
  • 1 egg
  • 30g fresh parsley, chopped
  • salt and pepper to taste
  • sunflower oil for frying

For the curry sauce

  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2tsp turmeric
  • 1tsp garam amasala
  • 2tsp paprika
  • 1tsp cinnamon
  • 1tsp cumin
  • 1tsp black pepper
  • 100ml tomato puree
  • 80ml double cream
  • salt to taste
  • fresh coriander for serving
  • fresh lime for serving, if wished

Preparation:

  • To make the koftas – in a bowl, combine all the ingredients together and mix well. Make the meatballs, as big as you wish and fry them in a heated pan with sunflower oil for 5 minutes, turning them constantly. As I’ve used cooked lamb, I’ve only browned the meatballs but if you choose to use raw meat, make sure to cook it thoroughly.
  • Leave them on a plate with kitchen towel to drain the excess oil.

  • Next, prepare the curry sauce – heat a pan with the oil and sweat the onion and garlic for a few minutes, add the spices, mix well and pour over a litre of water. Add the tomato puree and leave to simmer for about 15 minutes.
  • Add the meatballs in the curry sauce and leave for another 10 minutes on a low heat. Stir in the double cream and remove from the hob.
  • Serve with some basmati rice and/or Naan bread. Also, I like adding fresh coriander, lime juice and some chillies, of course. 🤪
