Happy Monday guys! Recipe of the day is No Bake Oreo Cheesecake – an all time favourite for kids and grown ups. 😀
What you need:
- double cream
- cream cheese
- Oreo biscuits
- butter
- powder sugar
- vanilla extract
Here’s how to make this lovely No Bake Oreo Cheesecake
Ingredients:
- 3 x 180g Oreo biscuits (200g for the bottom layer and the rest is for the cream cheese layer and decoration)
- 500g cream cheese
- 300ml double cream
- 2tbsp powder sugar
- 1tsp vanilla extract
- 100g butter, melted
Preparation:
- First, prepare the bottom layer. Remove the cream of 200g of the Oreo biscuits – use a knife to gently scrape it off. To make it easier, make sure the biscuits are cold.
- Put the cream in a bowl with the cream cheese.
- Blitz the Oreos completely, combine with the butter and press the mixture firmly in a 22cm baking tray, lined with baking parchment. Make sure the layer is smooth and even. I used a square dish as my cake tin is quite big.
- Add the vanilla and powder sugar to the cream cheese and mix for a couple of minutes. In a separate bowl, mix the double cream until thick, but not too much as it will be difficult to combine with the cream cheese.
- Combine the two mixtures together and mix well. Break about 8-10 Oreos in pieces and stir in the mixture.
- Add the cream cheese layer over the bottom layer, making sure it’s nice and smooth.
- Decorate with the rest of the biscuits or use any decoration you fancy.
- For best results, refrigerate overnight.
