Happy Thursday guys! Recipe of the day is Blueberry Cookies – chunky, buttery and chewy, absolutely delicious cookies.
Ok, so I was pretty sure the kids’ favourite were the chocolate chip cookies(white and milk chocolate in particular) but I was wrong.
After visiting the farmers market I got home with a bag with freshly picked blueberries (including many other goodies).
I wasn’t really sure what I was gonna do with them, but after enjoying half of them I decided I’d use the other half in a recipe.
We’re all big cookie fans in our family and my Chocolate Chip Cookies are always a winner. I probably bake them every other.
That’s why I wanted to try using fresh blueberries instead of the chocolate chips. And I was not disappointed. They were so so yummy. The acidity of the blueberries and their a bit of sour taste matched perfectly with the gooey buttery dough – such a simple but divine treat.
I suggest, if you spot any blueberries, try these super cookies, not only they’re super simple to make but they taste amazing.
What you need:
- flour
- butter
- brown sugar
- caster sugar
- an egg
- fresh blueberries
- bicarbonate of soda
- vanilla extract
Here’s how to make these gorgeous Blueberry Cookies
Ingredients:
- 225g flour
- 80g brown sugar
- 80g caster sugar
- 125g butter, melted
- 1tsp vanilla extract
- 1 egg
- 1/2tsp bicarbonate of soda
- 1/4tsp salt
- 150g fresh blueberries
Preparation:
- Preheat the oven to 190°C.
- In a bowl, combine the flour, salt, bicarbonate of soda and sugar.
- Add the egg, melted butter and vanilla and mix well. Stir in the fresh blueberries.
- Make small balls and arrange them on a baking tray ensuring there’s enough space between them.
- Bake in the oven for about 8 minutes. Let them cool down completely.
