Happy Monday guys! Recipe of the day is Lemon Meringue Pie – light and refreshing dessert, perfect for the hot Summer days.

What you need:
- lemons
- flour
- butter
- eggs
- powder sugar
- caster sugar
- cornflour
Here’s how to make this lovely Lemon Meringue Pie
Ingredients:
For the pastry:
- 225g plain flour
- 170g butter
- 40g powder sugar
- 1 egg, beaten
- For the lemon filling:
- 6 lemons
- 50g cornflour
- 200g caster sugar
- 6 egg yolks
For the meringue:
- 4 egg whites
- 200g caster sugar
- 2 tsp cornflour
Preparation:
- Preheat the oven to 180C.
- To make the pastry, combine the flour and butter together, add the powder sugar, a tbsp of water and egg.
- Dust your work surface with flour and roll out the dough to about 3mm thickness.
- Use your rolling pin to gently transfer the dough to a flan tin. Cover with cling film and refrigerate for 30 minutes.
- Line the pastry with parchment and arrange baking beans on top. Bake in the oven for 15 minutes. Remove the parchment and beans and return to the oven for another 5 minutes.
- To make the lemon filling, mix the lemon juice and zest with the cornflour.
- Bring around 400ml of water to the boil and stir in the lemon mixture. Keep stirring until thick .
- In a separate bowl. whisk the egg yolks and sugar and carefully whisk them into the lemon mixture over a medium heat until thickened. Remove from the hob to cool for a few minutes and then pour over the pastry.
- To make the meringue layer, whisk in the egg whites until peaks form. Add the sugar little by little and keep whisking. Add the cornflour, whisk again. The meringue should be stiff and glossy.
- Spoon the meringue layer on top of the pie, covering it evenly. Bake in the oven for about 15 minutes at 170C until lightly brown and crisp.
- Let it cool down before serving.
