Happy Thursday guys! Recipe of the day is Panzanella Burrata Salad – grilled veggies, crispy golden croutons and creamy Burrata cheese – definitely my kind of salad. I can honestly have this every single day.
We had this delicious salad last weekend and I’m already craving another one. This is my appetizer, main and dessert. You won’t need anything else apart from this salad, it’s super filling and will keep you full and happy for a long time.
The combination of the creamy Burrata, Basil Pesto & Grilled Veggies is to die for. And I threw in some crispy golden croutons to soak all those lovely juices.
What you need:
- Burrata cheese
- grilled peppers
- grilled aubergine
- olive oil
- grilled cherry tomatoes
- basil
- pine nuts
- salt
- lemon
- garlic
Here’s how to make this beautiful Panzanella Burrata Salad
Ingredients:
- 2x125g Burrata cheese
- 2 grilled peppers, cut in pieces
- 1 aubergine, grilled and sliced
- 200g mixed cherry tomatoes, grilled
- around 100g homemade croutons (use stale bread, olive oil, garlic & oregano to make them)
For the Pesto:
- around 15 basil leaves
- 2tbsp olive oil
- 30g pine nuts
- a touch of grated Parmesan
- salt to taste
For the dressing:
- 2tbsp olive oil
- 1tbsp lemon juice
- salt to taste
Preparation:
- To make the pesto, simply blitz the ingredients together (cashew nuts and sunflower seeds also work great for the pesto)
- Arrange the grilled veggies on a couple of salad plates.
- Add the croutons and Burrata cheese.
- Finish it off with bits of the pesto and the dressing.
