Happy Monday guys! Recipe of the day is Roasted Carrot Hummus – delicious veggie dip, perfect with some pita bread or veggies sticks.
What you need:
- tahini
- carrots
- lemon
- garlic
- chickpeas
- olive oil
- salt
It only takes a few minutes to make this yummy and healthy hummus. You can roast the carrots in advance and store them in the fridge for up to 2-3 days. I love the flavour of the roasted garlic so I often throw the garlic cloves in the tray with the veggies, too.
We enjoyed this colourful dip with freshly made bread and veggies. It is perfect in wraps, salads and sandwiches.
Here’s how to make this beautiful Roasted Carrot Hummus
Ingredients:
- 300g carrots, roasted
- 1 heaped tbsp tahini
- 150g tinned chickpeas
- 2 garlic cloves, crushed
- 3tbsp olive oil
- 1/2 lemon, juice only
- 1tsp cumin
- salt to taste
Preparation:
- Blitz all the ingredients together. Use about 100ml of the chickpeas’s water and add a bit more if you prefer your hummus runny.
- Serve with some flat bread, pita chips or veggie sticks.
