Crunchy Muesli Biscuits

Happy Friday guys! Recipe of the day is Crunchy Muesli Biscuits – tasty little treats, packed with nuts, dried fruit and a tiny bit of chocolate. 🙂

Crunchy Muesli Biscuits

What would you do with a soon-to-expire pack of muesli?

I went for these Crunchy Muesli Biscuits and they instantly become a firm favourite. They’re great as a little treat and taste delicious – crunchy, nutty and buttery.

They’re quite sweet because of the dried fruit and chocolate on top but I added a few tbsp of sugar as the kids love their sweets. I personally could go without the sugar so if you don’t have a sweet tooth you might actually skip the sugar.

Here’s how to make these lovely Crunchy Muesli Biscuits

Ingredients:

Preparation:

  • Preheat the oven to 180°C.
  • Place the muesli in a food processor and work the mixture until smooth.
  • In a bowl, combine the muesli, sugar, butter and eggs. Make small balls, a bit bigger than a walnut and gently press them between your palms to make a biscuit, around 1/2cm thick.
  • Place on a baking tray line with baking parchment and bake in the oven for about 12 minutes. Leave to cool.
  • Drizzle with the melted chocolate and let it dry for a few minutes before serving.

Enjoy!
