Happy Wednesday guys! Recipe of the day is Potato Pancake with Feta Cheese – a giant potato pancake, crispy on the outside, soft and fluffy on the inside, with feta cheese and mint.
This giant potato pancake is another proof that the simpler the food, the tastier. It might look too simple, but I promise you, it tastes divine and it turned out it wasn’t big enough for us. 🙂
What you need:
- potatoes
- eggs
- feta cheese
- dry mint
- salt and pepper
- sunflower oil
Here’s how to make this delicious Potato Pancake with Feta Cheese
Ingredients:
- 1kg potatoes, grated
- 200g feta cheese, crumbled
- 2 eggs
- 1tbsp dry mint
- salt and pepper to taste
- 100ml sunflower oil
Preparation:
- First, you need to drain all the excess water from the grated potatoes. Use a big sieve over a bowl and squeeze the potatoes between your hands for good 5-10 minutes until you feel there’s no more liquid left in them.
- Place the drained grated potatoes in a bowl, add the feta cheese and eggs, season with salt and pepper and dry mint and mix well.
- Heat a pan with half the oil, turn the heat down and arrange the grated potatoes, gently pressing them down. Leave for about ten minutes. Make sure the temperature is really low.
- To turn the potato pancake over, use a shallow plate, cover the pan with it and gently flip it over.
- Pour the rest of the oil in the pan and wait till it’s hot. Place the pancake back into the pan for another 10 minutes. Spread some butter on top while it’s still hot.
- Serve with topping of your choice – smoked salmon, sour cream, avocado, cheese, etc.
