Happy Monday guys! Recipe of the day is Mexican Style Carnitas Pancakes – topped with succulent pork, salsa, guacamole and sour cream, these pancakes are on a whole different level.
And as Pancake day is tomorrow, what a better time to make these?
What you need:
- self-raising flour
- baking powder
- salt
- milk
- eggs
- butter
- sour cream
- cooked pork (leftovers are perfect!)
- tomatoes
- lime
- coriander
- onion
- salt and pepper
Here’s how to make these delicious Mexican Style Carnitas Pancakes
Ingredients:
For the pancakes:
- 200g self-raising flour
- 200ml milk
- 3 eggs
- 1tsp baking powder
- 20g butter
- 1tsp salt
- extra butter and oil for frying
For the toppings:
- 200g shredded pork ( I used some leftovers from my Sunday roast)
- 1 tomato, finely chopped
- 1 ripe avocado
- 1/2 onion, finely chopped
- 1 lime
- 15g coriander, chopped
- salt and pepper to taste
- sour cream for serving
- hot sauce for serving
Preparation:
- In a bowl, mix the milk, eggs and butter and gently fold in the flour, baking powder and salt. Make sure the mixture is smooth and creamy.
- Heat a pan with a bit of butter and oil and add a spoonful of the mixture. Cook for about 2-3 minutes or until small bubbles are formed and flip it over for another 2 minutes. Repeat with the rest of the mixture.
- In a bowl, combine the avocado with half of the chopped onion and half of the coriander. Season with salt and pepper to tatse and squeeze half of the lime.
- For the tomato salsa – in a separate bowl, mix the chopped tomatoes, the rest of the onions and coriander. Add the rest of the lime juice and season with salt and pepper.
- To build the pancakes – add a small serving of the shredded pork, a spoonful of the tomato salsa and guacamole. Finish with some sour cream on top.
- If wished, add some hot sauce and/or grated cheese.
