Spicy Chicken Liver Kale Salad

I think chicken liver is very underestimated and if you haven’t tried it so far, you’ve definitely missed a lot. Not only it is healthy and tasty but it is also budget-friendly.

It’s quite popular in salads, on a bun or on its own. As I am a true spicy fan, I made the liver for this recipe really really hot. If you can’t handle too much spice, add less of the chilli powder. The sour cream actually balances it out quite well but the fire is still there. 🙂

I’ve used Cavolo Nero but regular kale or the recently so popular kalettes are perfect too.

What you need:

  • chicken liver
  • cavolo nero/kale
  • pine nuts
  • sour cream
  • onion
  • chilli powder
  • soy sauce
  • brown sugar
  • vinegar
  • garlic powder
  • salt and pepper

Here’s how to make this Spicy Chicken Liver Kale Salad:

Ingredients:

  • 300g chicken liver, cleaned
  • 80-100g Cavolo Nero kale
  • 1tbsp pine nuts
  • 2-3tbps sour cream
  • 1 shallot

For the spicy marinade:

  • 2tbsp chilli powder
  • 3tbsp soy sauce
  • 1tbsp brown sugar
  • 2tsp garlic powder
  • salt and pepper to taste

For the salad dressing:

  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt to taste
Spicy Chicken Liver Kale Salad

Preparation:

  • To marinade the liver – simple mix it with all the marinade ingredients and refrigerate for an hour
  • Heat a pan with some olive oil and and add the liver. Leave on for 10 minutes then stir in the shallot. Season with salt and pepper.
  • Cook for another15 minutes, stirring constantly.
  • In a bowl, gently massage the kale with some olive oil, add the lemon juice and season with salt.
  • Arrange on a serving plate, add the chicken liver on top, and a few drops of sour cream. Sprinkle the pine nuts and serve.
