Happy Wednesday guys! Recipe of the day is Spicy Roasted Cauliflower Salad – so tasty and so filling!
It seems I can’t get enough of cauliflower this month. But there are so many different and very tasty ways to prepare it. As I love salads and as it’s January (Veganuary), here’s another gorgeous salad. It is a real treat, for salad lovers like me. 🤪
What you need:
- cauliflower
- butter beans
- black quinoa
- feta cheese
- Sriracha mayo
- coriander
- chilli powder
- honey
- soy sauce
- Worcestershire sauce
- vinegar
- olive oil
- salt and pepper
Here’s how to make the Spicy Roasted Cauliflower Salad:
Ingredients:
- 1 small cauliflower, broken into florets
- 120g feta cheese, crumbled
- 100g black quinoa, cooked
- 120g butter beans, tinned
- 2tbsp Sriracha mayo
- coriander leaves for serving
For the spicy marinade:
- 2tbsp chilli powder
- 1tbsp honey
- 2tbsp soy sauce
- 1tbsp Worcestershire sauce
- 1tsp garlic powder
- 1tsp vinegar
- 1tsp salt
- 1tsp pepper
Preparation:
- Combine the marinade ingredients and mix in the cauliflower florets. Refrigerate for 30 minutes.
- Preheat the oven to 200°C. Grease a baking tin with some olive oil and bake the cauliflower for about 20 minutes. Make sure to turn it regularly and brush some more marinade.
- To build the salad – start with placing the black quinoa at the bottom on your serving plates, add the butter beans, cauliflower florets and crumbled feta.
- Add a drizzle of olive oil and season with salt and pepper to taste.
- Add a few tiny drops of the Sriracha mayo and finish with some coriander leaves.
