Happy Thursday guys! Today’s recipes is Roasted Polenta Parsnips – a perfect side for all those leftovers!
These golden parsnips are not only quick and easy to make but they taste delicious and kind of look fancier than the regular roasted parsnips. All you have to do is to par-cook them for a few minutes, cover them with polenta(and a few spices) and roast in the oven. Serve with some dips and you might not need anything else. 👌 I had mine with my favourite spicy sriracha mayo. This time I made it by scratch, and honestly it tasted better than the shop-bought. There are just a few more ingredients to add till it’s completely perfect so I think I’ll be making lots of it. 🤫
What you need:
- parsnips
- polenta
- paprika
- salt & pepper
- olive oil
How to make the Roasted Polenta Parsnips:
Ingredients:
- 1kg parsnips
- 100g polenta
- 2tbsp paprika
- 2tbsp olive oil
- salt and pepper
Preparation:
- Par-cook the parsnips in a pot with boiling water, so they’re getting soft on the outside but not cooked completely. Remove form the pot to cool.
- Preheat the oven to 200°C.
- Cut the parsnips in halves, lengthwise and generously drizzle them with olive oil.
- Mix the polenta and seasoning in a shallow plate and start covering each and every piece of the parsnip halves.
- Place them on a greased baking tray and cook for about 15 minutes.
