Happy Wednesday guys! Recipe of the day is Tastiest Tabbouleh Recipe – my favourite Tabbouleh salad ever which also happens to be vegan! 👌
I know there a quite a few versions of this beautiful salad, but this one is definitely the one I love most. Who says Winter salads are boring? This bulgur wheat salad is bursting with freshness, crunchiness and a combination of so many flavours. I like the addition of dried apricots and the tanginess of the pomegranate. It’s a seriously delicious stuff I’m talking about! 😄
And because I’m such a salad lover I could not wait to share this vibrant Middle Eastern beauty with you. Apart from being super delicious and healthy, this salad is also very quick and easy to make. You may prep the bulgur wheat in advance, so that you’ll only need to combine the ingredients together.
What you need for the Tastiest Tabbouleh Recipe:
- bulgur wheat
- pistachios
- dried apricots
- pomegranate
- fresh mint
- fresh coriander
- lemon
- olive oil
- salt
Here’s how to make the Tastiest Tabbouleh Salad:
Ingredients:
- 150g bulgur wheat, cooked
- 50g pistachio nuts, roughly chopped
- 10 dried apricots, thinly sliced
- 1 small pomegranate, seeds only
- 15g fresh coriander, chopped
- 15g fresh mint, chopped
For the dressing:
- 1 lemon, juice only
- 2tbsp olive oil
- salt to taste
Preparation:
- Combine the bulgar wheat with the rest of the salad ingredients in a bowl
- Add the dressing ingredients and mix well
- Serve as a side dish or on its own
