Happy Wednesday guys! Today’s recipe is Blackberry Coconut Oat Bars – healthy and nutritious oat bars with ripe blackberries and coconut.😋
These oat bars (practically flapjacks) are so simple to make, they only take a few minutes in the oven but the flavour is to die for. I really love oats and have been making different kinds of porridge, oat cookies and oat bars since I remember. 🤣 One ingredient that is a must with oats, for me, is butter. Oats love butter and butter loves them. 😆 Apart for adding butter, I’ve flavoured my Blackberry bars with desiccated coconut and cinnamon. The combination between all these flavours was really tasty.
You can add dried fruit, nuts, seeds or even chocolate, the combinations are endless. Make it healthier or a bit more naughty and indulgent, it makes a perfect dessert too. I enjoy the plain ones too, I just like the oaty flavour, soaked in butter. 🤤 It’s perfect for breakfast or snack. My kids really like oat bars/flapjacks in general but not the Blackberry ones for some reason, I had to pick them out. 🙈 They prefer the sweeter versions with dried fruit, chocolate and also nuts.
