How’s your Summer going so far? We’re having a blast at the seaside but the time goes so so quick! It’s really hot in here so all I’m craving is salads, especially tomato salads and grilled veggies, lots of them!ย ๐Ÿ™ˆ I can’t get enough of grilled zucchini, carrots and eggplants. I usually have them on their own but sometimes I add some feta cheese too.ย ๐Ÿ‘ŒIt’s pretty much what I’ve been having for lunch the last few days. Back to the recipe now..

I made these delicious Zucchini Rolls right before we left for our holiday and I just loved them. I have previously made Zucchini Rolls ( check hereย ๐Ÿ‘‰ย MeatlessMonday: Stuffed Zucchini Rollsย ) but these ones are a bit different. I have wrapped them up with some prosciutto and then on the inside, I filled them in with Basil Mascarpone. It’s like combining some freshly made pesto with Mascarpone. The combination is so delicious!ย ๐Ÿคค
