Happy Friday guys! Today’s recipe is Truffle Burrata, Prosciutto & Fresh Pesto Salad – I can only describe it with one word – divine! 🤤
As promised last week, my sexy Burrata salad is here! And it is delishhh! Honestly, this is one of the best salads I’ve ever had and the one that gives so much satisfaction.
Clearly, I’m Burrata obsessed. 🤷 But how could you resist this creaminess with truffle? Yes, the one I get is Truffle Burrata. I’ve been getting it from a Farmer’s market, probably for the last month or so now ( I think it’s time to ask for a discount 🤣) and I just can’t get enough.
To tell you the truth, I had a dilemma. I couldn’t decide whether I should make Prosciutto, Rocket & Burrata or Buffalo Tomatoes, Croutons & Burrata, both with a generous serving of homemade pesto, of course! What about combining all this deliciousness in a plate? Yes, this is what I did And it was so good that I want to have it again and again, and again…😋
I made my own pesto, which I recommend you do. It’s really simple and tasty. Also, I use some stale bread for the croutons, just drizzle it with olive oil and some herbs and bake in the oven till golden. Well, the prosciutto is shop-bought, I can’t really make that one. 😃 Toss it all in a plate, drizzle with some olive oil or rapeseed oil (which I absolutely loved and used on this salad) and dig in!
