I hope you’ve had a magical Christmas and a lovely New Year’s Eve. I myself had a great time off with my family and now it’s time to get back to reality. Well, technically, there’s the weekend (thankfully) but from Monday everything goes back to normal which means busy busy mum and dad. 😃 I have kind of started to prepare by organising and planning our family activities and to-dos. As much as I loved the festive period, I think all of us are ready to get back into our usual routine. Right, that was just a quick update, but let’s head to the recipe now..
The Brussel Sprout & Roasted Almond Salad is the simplest thing ever – shredded Brussels sprouts, carrots & roasted almonds. The dressing is simply olive oil, lemon juice and salt.
Shredding the Brussels sprouts has become our favourite way to have them. We had quite a few shredded and sautéed Brussels sprouts over the holidays which are super tasty too.
Unfortunately, this salad does not stay well in the fridge, in other words, have it as soon as you make it. Brussel Sprouts change colour and smell when they are left for too long.
The salad is also very tasty in wraps or sandwiches, especially meaty ones. For instance, next time you’ve got leftover pork, why not make some shredded pork and Brussel sprouts sandwich. It really is delicious and simple! And you get one of your five a day. 👍
