Happy Tuesday guys! Today’s recipe is Pumpkin & Chorizo Corn Tacos – different but absolutely delicious!
How’s your week going so far? We’ve been enjoying some wonderful weather (and sunshine!) here so all is good, you know running around after little feet. 🤣
As you can see, my pumpkin ‘series’ continue. And I’ve planned a few more till the end of October, hopefully I manage to post them.
Once we hit November, it’s all about the Festive season. Yay! Honestly, food blogging is so exciting. There’s always something to look forward to.
Let’s focus on the recipe…
It’s incredibly simple and so tasty. First of all, the feta cheese and pumpkin combination is amazing! Adding some spicy chorizo, fresh guac and sour cream and serving it on a soft shell corn taco brings it to a whole new level. even the kids had some and I think they actually liked it.
I had prepared the pumpkin in advance so all I did was to whip some fresh guac which takes a few minutes. We had these for Sunday lunch and even though it might have looked they require lots of time, they actually take a few minutes (having the pumpkin roasted in advance).
And the corn tortillas… I do recommend if you could, try and get some. However, I don’t see them quite often in the shops I visit and the ones I got are actually a bit pricy. I might actually try and make my own next time, I’m sure they’re not that tricky after all.
I served them with some tortilla chips and extra salsas, dips and hot sauce of course. 🔥
