Happy Monday guys! Today’s recipe is Smoked Salmon & Vegetable Crisps Sandwich – an upgraded version of the tasty smoked salmon sandwich.
By the way, Happy Back to School Week to all the parents. I honestly think we’re actually getting busier during school time and I’m definitely more exhausted than the Summer holidays. It’s just that the kids have got quite a few activities and it’s quite a rush everyday but hey, this is what parents are for right! And I love it (most of the time 🤣) as I know time does fly so I’d really like to enjoy these days. Wow, I think I’m getting a bit cheesy so time to stop and go back to this succulent sandwich.
I’ve been obsessing with vegetable crisps recently. Now that Autumn is coming, it means lots of beets, parsnips and sweet pots turned into veggie crisps. 😋
So, the other day I thought it would taste nice if I added some in my smoked salmon sandwich. It honestly made this simple sandwich taste AMAZING. I used a mix of veggie crisps (beetroot, sweet potatoes and parsnips) which I recommend rather than using one kind. I make my own crisps most of the time but for this sandwich, I had some shop-bought which by the way are my absolute favourite.
I chose German rye bread which is quite moist and tastes a bit sour but just perfect with the smoked salmon and cream cheese.
This yummy sandwich is ideal for a busy lunch on the go. It can be stored in the fridge for a couple of days so why not make your lunch a bit more exciting and pack a few of these bad boys?👍
