Happy Monday guys! Today’s recipe is Grilled Eggplant & Corn Salad – served with Feta cheese crumbs this salad is absolutely delicious and I could probably have it everyday (at least in the Summer).
I love it when my plate looks so colourful. I once read that the brighter the food colour the healthier the food. I’m not sure about that but I can surely tell you this salad is super tasty. Seriously, just look at it, doesn’t it look appetizing? It sure does to me. 😋
We actually ended up having it for dinner. It was really filling and I had prepared quite a generous serving anyway. 😀
Apart from the grilled eggplant and corn, I used roasted red peppers, fresh parsley, red onion and feta cheese. The dressing was simple – olive oil, lemon juice and salt.
Make sure to peel the eggplant and soak it in water for at least 30 minutes. This will reduce the bitterness.
Grilled veggies are definitely a favourite of mine. I love having them in salad, as side dishes or simply on their own. They’re just delicious. As the weather’s been really nice lately we do try to grill more often hence more salad recipes. 🙂 Don’t think we grill vegetables only though. We enjoy meat too, especially the hubby so our grill is a mixture of everything pretty much.
