Meatless Monday Recipe of the day is this too healthy salad with kale, dried figs, goat’s cheese and pecans.
This was so good and filling that I only regret I didn’t make more. 
I really enjoy sweet and sour tastes combined together. It’s like an explosion of so many different flavors.
The salad is way too easy to make but there’s one tricky step – you must massage the kale first!
I know how it may sound but, believe me, literally you need to massage it with your hands with a bit of olive oil and salt. Thus, it becomes much softer and palatable. 

So here’s what you need for this health-boosting goodness.

Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz kale leaves
  • 150g/5oz goat’s cheese, crumbled in small pieces
  • a handful of pecans
  • 7-8 dried figs, cut in halves
For the dressing:
  • 3tbsp extra virgin olive oil
  • 2tbsp balsamic vinegar
  • 1tbsp lemon juice
  • salt

Preparation:
  1. Toss the kale in a bowl and massage it gently with the olive oil and salt. Add the balsamic vinegar and mix well.
  2. Transfer the kale into a serving bowl and arrange the figs, goat’s cheese and pecans on top. Simple as that!

Tip: Kale loves acid so be generous on the vinegar (I like combining a bit of fresh lemon juice with some balsamic vinegar)!
