Happy Monday guys! Today’s recipe is Chicken Salad Bowl with Spicy Harissa Dressing – healthy, filling and with a spicy kick.
This is one of those simple dishes that taste so good it feels like you’ve put a lot of effort in it. Honestly though, it takes a few minutes, probably 5. All I used was leftover chicken, ripe avocado, crunchy red pepper, tinned corn and of course harissa for the dressing. I also topped everything up with a spoon of creamy Greek yogurt to kind of balance the flavours out. Nom nom nom, I’m drooling now..:-)
To make the dressing you’re gonna need olive oil, lemon juice, salt and of course, harissa. I actually used dry harissa seasoning and simply combined everything together. The dressing turned quite intense as you may know I love everything spicy, quite spicy actually. But you can always adjust it to your liking adding less or more of the spice. This dressing works perfect for marinating meat, say chicken. Simply soak it overnight in the harissa and throw it on the grill the next day. Made too much of the dressing? Don’t worry, you can easily store it in the fridge for a good few days.
This colorful bowl is just perfect for a quick and tasty healthy lunch. Make ahead, put it in a container and take it to your workplace for a nutritious and filling meal. Feeling super hungry or need more calories? Wrap it up! Yes, the chicken salad is so delicious in a wrap. I would probably use a couple wraps. Whatever you choose, I hope you enjoy it! 🙂
