by MummysFastandEasyJune 13, 2015June 13, 2015 Mummy’s Fast & Easy One of our many family favourites are definitely meatballs. I love making Swedish meatballs, oven baked meatballs and whatnot. Yesterday, tough, I made meatballs in sweet and tangy tomato sauce, served over a bed of pasta and topped with melted cheese. Yummy! I know I’m usually on the healthy side but I love to indulge myself, especially in this juicy explosion of flavors. It is totally worth it! Here’s what you need. Mummy’s Fast & Easy Ingredients: 500g/1lb minced pork 1 egg 1 onion, chopped 2 garlic cloves, crushed 2 slices of stale bread, soaked with water 1tbsp olive oil 1tsp nutmeg 1tsp cumin salt and pepper grated cheese fresh chopped parsley, if wished For the Tomato sauce: 500g/1lb passata 500g/1lb tinned tomatoes 2tbsp brown sugar salt Mummy’s Fast & Easy Preparation: In a bowl, start mixing the minced pork with the seasoning, egg, bread, onions and garlic. Heat a pan with the olive oil, make the meatballs( I made about 8) and gently place them in the pan. Cook for about 10 minutes, making sure you turn them around constantly. Start adding the tomatoes and passata Season with salt and sugar and leave for another 10 minutes. Remove from the hob, sprinkle with some cheese and fresh parsley and serve. Enjoy!
