One of my favourite dips/appetisers is definitely the hummus.
And if by now I’ve only tried the classic chickpeas hummus, the other day I discovered another amazing hummus recipe – mung bean hummus.
It was the first time I actually made mung beans.
I have recently spotted them in one of the international food stores.
And because I really like trying new stuff, I bought them. And apparently, they’re not only tasty but are really good for you.
The hummus tasted just divine. I can’t say which one I prefer now – the classic one or the bean one!:-)
Here’s what you need.

Ingredients:
- 500g/1lb mung beans, cooked
- 125g/4oz tahini
- 3 garlic cloves, crushed
- a bunch of fresh parsley, chopped
- 1 cup olive oil
- salt and pepper

Preparation:
- To cook the beans – follow the instructions on the back of the pack.
- In a bowl, put the cooked beans, parsley, tahini, garlic, salt and pepper and olive oil.
- Work the ingredients with a food blender until a smooth paste.
- Serve the hummus with carrots, cucumbers or pita bread. Drizzle some extra olive oil on top.

Tip: Try adding some cooked carrots in the hummus ingredients for more flavour.
