The recipe of the day is here and is another quick and easy fix that will leave you full for longer.
As I love butternut squash and I wanted to use the one I had at home to make a salad, here’s what happened – Squash Salad with Penne and Peas. 

One of my favourite squash salad is actually with feta cheese, you can find the recipe here. But it was time to try out something new and this new recipe really worked for me. I dressed the salad with fresh lemon juice, olive oil and salt so it added some extra freshness. And to finish it off, I grated some Parmesan cheese. It was really yummy and easy to make so I definitely recommend it if you’re struggling to find time to cook!

Here’s what you need.
 
Mummy’s Fast & Easy

Ingredients:
  • 400g/1lb butternut squash, sliced in cubes and cooked
  • 300g/10oz penne, cooked
  • 150g/5oz peas, cooked
  • fresh parsley for serving, if wished
  • Parmesan cheese for serving
For the dressing:
  • 1tbsp fresh lemon juice
  • 2tbsp olive oil
  • salt

Mummy’s Fast & Easy

Preparation:
  1. In a bowl, combine the salad ingredients together.
  2. In a separate bowl, mix the dressing ingredients together and pour over the salad.
  3. Mix well. Grate some Parmesan cheese, add the fresh parsley and serve.
