I’ve always been attracted to bright and colourful foods.
Not only they are super healthy, in most of the cases, but they look amazing combined with other products and arranged on your plate.
Today’s recipe is all about the superfood beetroot.
I know lots of people ignore it because they are not sure how to cook it.
Well, i think it is super delicious raw, in a super healthy salad, for example. But there are so many different ways to cook this amazing vegetable – soups, bakes, even pestos.
So, I think I’ll start trying all these different recipes myself, as I have not been cooking lots of beets recently. 🙂 I was mainly offering it on a salad. 
The recipe I’m sharing today is Grilled Beetroot & Brie Stackers.


Mummy’s Fast & Easy


Apart from the goat’s cheese, beetroot works perfect with brie, I believe.
All you have to do is just to grill the beetroot for a bit, drizzle with good quality olive oil and enjoy.
Simple, quick and tasty!
Oh, and healthy!
Here’s what you need.

Mummy’s Fast & Easy

Ingredients:

  • 150g brie, sliced
  • 2 – 3 beetroots, sliced
  • 1tbsp olive oil
  • 100g walnuts

Preparation:

Preheat the oven to 200°C.
In a baking tray, place the sliced beetroot.
Drizzle with some olive oil, sprinkle salt and bake in the oven for about 10 minutes on the grill setting.
Take out and place a slice of brie on each beetroot.
Bake for 5 more minutes or until the brie starts melting.
Then make the stackers.
I’ve made mine with 3 – 4 slices of beetroot and brie in between but you can make the with less to more slices, up to you!
Drizzle with a bit more olive oil and serve with some walnuts on a side!
