Happy Tuesday guys! Today’s recipe is Stuffed Jalapeño Peppers – spicy, tasty and a must for your party!
I absolutely love these green hot peppers! Unfortunately, they are really hard to find fresh here in the UK. So you can understand my excitement when I found these spicy beauties in one of my local shops – all fresh, dark green and just waiting to be picked up. 🙂 This is what I did. I actually got quite a lot but used them all up. We had an absolute feast with these – added them (like lots of them!) on BBQ Pulled Pork Nachos(I really wanted to share the recipe with you but it was a very late Sunday night and we were just getting ready to watch a movie and all I wanted was to dive in this super yummy tray with nachos :-), but I promise I’ll share the recipe soon. 🙂 Ok, where was I..? Apart form using the jalapenos on almost everything I also made some stuffed ones which turned absolutely amazing. We all love jalapeno poppers but I wanted to try something a bit different that would be tasty and perfect for entertaining friends and family( the festive season is coming!).
I made salsa with tomatoes, peppers & avocado. The yellow peppers I used taste very different to the jalapeño so it worked fine (in case you’re wondering 🙂 ). Then I added some juicy shrimps that I simply sweated a bit with garlic. Of course, everything was finished up with some cheese. Pop it in the oven for a few minutes and enjoy!
A quick tip or two: To take some of the heat off of the peppers serve with sour cream. Also, take care when deseeding and cutting these hot beauties, meaning use gloves. I remember years ago, cutting kilos of them without using gloves. Not a good idea, I was on fire, literally, I even thought going to the hospital. Luckily my hands were on fire for a few hours only. People learn from their mistakes, right! 🙂
Happy Sunday all! Recipe of the day is Leftover Rice Bites with Vegetables, Chicken & Cheese! What an amazing way to use up your leftover rice!
As the title suggests these cute bites were made of some leftover rice and chicken. I only added some cheese and egg to hold them together. I cooked them in a muffin tray for about 20 minutes and they were all gone in 10. It’s funny how my kids refused to eat the rice left in the fridge but then they really enjoyed these bites. Bottom line is you need to be creative to feed your kids. 🙂 Just joking! I don’t think I’m very creative. Anyway, this was a simple and delicious way to use up my leftover rice. You can make it from scratch too – all you need is some cooked rice with vegetables (I used carrots and peppers, thinly chopped), cheese and an egg.
By the way, what’s your favourite Summer food/what is the recipe you love making during the hot and sunny days? I love making lots of fresh salads, but I’m trying to add something new every time, otherwise I’ll get bored, no matter how tasty the veggies are. Like, for example, last night I had a Caprese salad, but I use homemade zucchini pesto, which is also raw vegan and it tasted simply delicious. These rice bites are very handy on the go. You can also store them in the fridge for a few days and use them as a snack. They make delicious starter too. Whatever way you choose to serve them, they won’t disappoint, I promise. 🙂

Happy rainy Thursday all! The recipe of the day is tasty and cute – Spinach Bites! These are made with only a few ingredients but they’re a real crowd pleaser. I mean who wouldn’t love these – buttery puff pastry generously covered with spinach cream cheese. Don’t tell there’s spinach and I’m sure no one would notice. Seriously, even the kids liked these (I’m pretty sure they didn’t realize there’s quite a lot of spinach in them). 🙂

These are all very simple and quick to make and taste amazing. As a matter of fact, I absolutely love making a variety of appetizers as a dinner. 🙂 It’s kind of mix and match dinner. 🙂
And in these gloomy rainy weather, something green and tasty would make you feel better. 🙂 Seriously though, is it gonna snow in London? It seems we all have been waiting for the snow to come after warning for bad weather coming our way. At least the kids will be happy. Back to my recipe now..
So the only ingredients you’re gonna need are three – spinach, cream cheese and puff pastry. If you prefer and you’re good at it, you can make your own puff pastry. I used shop bought ready to roll pastry. It saved me lots of time and to be honest I use these quite often. It’s amazing – it’s a real-time saver and you don’t have to worry whether you’ll make the puff pastry actually puff. I’ve never made puff pastry before but I know it might be a bit tricky so I stayed on the safe side. 🙂 I used fresh spinach but frozen would work just fine. Simply make sure to defrost it before combining with the cream cheese.
And for meat lovers, some chopped crispy bacon inside the spinach cream cheese would taste divine. I shall try this next time I’m making these bites. Even some smoked fish would taste lovely. But enough already, there are many options and combinations, just choose the one you fancy and let’s get cooking. And eating. 🙂
Here’s what you need to make the cute little bites.
200g puff pastry
400g cream cheese
200g spinach, cooked and pureed
salt and pepper
Preheat the oven to 200°C.
Unroll the pastry, use a kitchen ring and cut small circles from the pastry. Place them on a greased baking tray and cook in the oven for about 15 minutes or until golden.
Meanwhile make the spinach cream cheese – in a bowl, simply combine them, season with salt and pepper to taste and blitz till a smooth green consistence.
Use a piping bag to cover the puff pastry with the spinach cream cheese!
