It was actually snowing here yesterday and you can’t imagine how excited we all were. It’s been a good few years since the last time it snowed properly so that was quite a festive day we had. 😀 Well, the snow managed to stay for a few hours only but still better than nothing. And today we’re back to normal – it’s been raining all day, the lights in the house are on since morning (sometimes I wonder whether it’s afternoon or evening). If only it could snow at Christmas and New Year’s Eve! 🙂 Let’s get back to the recipe now..

I used beef and pork mince, corn, cheese, sour cream, tomato sauce and some spices. I’d definitely have used some beans too but I didn’t have any at the house. So if you could use any, I’d say go for some pinto beans. The taco soup was cooked in my favorite cast iron casserole. Did I guys tell you about it? I’m pretty sure I did, but honestly, I simply love it. 😆 I served it with tortilla chips, sour cream, shredded cheese and some hot jalapeno peppers. I actually had lots of tortilla chips with it as I dipped them in the soup. It was soo yummy! Make sure to serve it hot and if you opt in for the spicy stuff you’ll definitely warm up if not sweating. 🙈

Ingredients

  • 400g beef & pork mince
  • 400ml passata
  • 200g tinned corn
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp cumin
  • 1tbsp paprika
  • 1tbsp taco seasoning
  • salt and pepper to taste
  • Monterey Jack cheese, shredded, for serving
  • 2-3 sliced jalapenos, for serving
  • tortilla chips for serving
  • sour cream for serving
  • 1tbsp olive oil

Instructions

  1. Heat a casserole with the olive oil and sweat the onions and garlic for five minutes. Add the beef & pork mince, season it with the spices and mix well. Add a cup of water and the passata. Stir in the corn too.
  2. Leave on the hob for about half an hour.
  3. Remove and serve with some tortilla chips, chopped jalapenos, sour cream and shredded cheese.
  4. Enjoy!

Happy Friday guys! Today’s recipe is Pumpkin & Chicken Casserole – seriously delicious and comforting one pot meal, just add some freshly baked (lots of it!) bread to it and serve it hot for a tasty heart-warming meal! 🙂

Honestly, I had about half of a bread loaf with this casserole and if I didn’t stop myself I would probably have had the other half too. 🙂 This Pumpkin & Chicken Casserole is just screaming for a delicious bread to soak the tasty juices with. I don’t have such meals very often but now the weather has changed, I’m sure this will change too. I seriously need to improve my self-control skills and be able to stop after having a generous amount though. 🙂 But try to look through my point of view – you get home after a long and exhausting day, haven’t had any food all day, froze yourself off at the park and finally  put the kids to bed and…see a pot with hot Pumpkin & Chicken Casserole and freshly baked bread! 🙂 How could you not eat half a loaf of bread with it. 🙂

Well, this was my story (or something like that) about what happened with the Pumpkin & Chicken casserole. Everyone really enjoyed it too! No leftovers and no bread left either. 🙂

So what’s in the casserole – Pumpkin, chicken, celery, Chorizo or any other red sausage and spices. As you can see – really simple, just a few ingredients but the taste is incredible. I can honestly say this has become one of our family’s favourite ‘Winter Warmer’ recipes, for sure.

Pumpkin & Chicken Casserole

Ingredients

  • 3-4 chicken legs ( or you can get a whole chicken and cut it in 4)
  • 1 small pumpkin, deseeded and cut into chunks
  • 1 Chorizo/red sausage, sliced
  • 2 celery stalks, chopped
  • 1 chicken stock cube
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 3 bay leaves
  • 4-5 black peppercorns
  • 1tsp allspice
  • 1tbsp paprika
  • salt to taste
  • olive oil

Instructions

  1. Preheat the oven to 180°C.
  2. Heat a pan with some olive oil and cook the chicken for about 7-8 minutes on each side. Remove it from the pot and add the onion, garlic, celery, sausage, pumpkin and spices. Gently sweat for about 10 minutes.
  3. Add the chicken stock and about a pint of water. Put back the chicken legs. Cover and cook for about 20 minutes. If necessary, add more water.
  4. Place in the oven for an hour.
  5. Serve with freshly baked bread, if possible.
  6. Enjoy!

Slow Cook Pork Stew with Dumplings

Happy Wednesday all! I have a very comforting and heart-warming Pork Stew with Onion Seed Dumplings for you today! It’s exactly what we need in this weather 🙂 It’ll  definitely make you feel better and warmer. And the best part are the all butter dumpling that are so buttery and so good soaking all the juices from the stew. Oh, and the second best part is that you actually make the stew in a slow cooker, so it’s very simple and straightforward. Seriously, if you don’t won one of these already, you definitely need to get one. It just makes your life easier and your food tastier 🙂 All you need to do is to dump the ingredients in the slow cooker and just relax. Well, make sure to stir it from time to time though as it may burn (I know from experience).

Pork Stew with Onion Seed Dumplings

It was the first time I used swede in a stew and to be honest, I was a bit sceptic about it, but as it happens most of the times, I loved it. I can’t believe I’ve neglected it and used it in salads mostly. Believe me, guys, it tastes amazing in stews, especially in a Slow Cooked Pork Stew 🙂 I’d describe the taste as a mixture of pumpkin and sweet potato.

Oh, and a little info on a side, you might wonder what the yellowish colour is form? I didn’t use turmeric but I used a tiny bit of a seasoning I got from Spain. It turns out, it’s actually meant to add colour to the dishes, not really flavour. Well, it really added colour to the Pork Stew 🙂

I used lots of other spices and herbs so this is like an explosion of flavours – there’s cumin, bay leaves, paprika, black pepper and nutmeg. This definitely made the dish so warming and simply delicious.

So, let’s get to the butter dumplings now 🙂 I’m pretty sure, from now on, I’ll add these to all my stews. They turned out so soft and purely tasted like butter. And I loved the onion seeds I added all over them (I’ve never used onion seeds before but saw them in my local store and decided to give them a go). Isn’t it great when you discover new ingredients and use them in your recipes? 🙂

If you’d rather use beef, that is fine, depending on the cut though, it’ll much likely take more time to cook it. But doest it really matter when you use the slow cooker 🙂

When I think about it, fish would be good too 🙂 I know, there are many options, but I recommend trying this Pork Stew first. You won’t regret it, you might even love it 🙂

Check below for ingredients and instructions to make this easy Pork Stew with Onion Seed Dumplings.

Ingredients:

  • 500g pork, cut in chunks
  • 1 carrot, roughly cut
  • 1 swede, cut in pieces
  • 1 onion, chopped
  • 2 bay leaves
  • 1tsp cumin
  • 1tsp nutmeg
  • 1tsp paprika
  • 1tsp salt
  • 2tbsp sunflower oil

For the dumplings:

  • 150g flour
  • 1tsp baking powder
  • 1tsp salt
  • 125g cold butter
  • 2tbsp onion seed

Preparation:

  1. Simply combine all the stew ingredients in the slow cooker, add about 2 cups of water and cover. Cook for about 1 hour, stirring occasionally. If necessary, add more water.
  2. To make the dumplings – combine the ingredients with the cold butter and add some warm water in order to make a smooth dough. Shape up small balls and sprinkle onion seeds all over them.
  3. Add the dumplings to the stew and cook for another 40 minutes or until ready. Make sure to stir the stew so it won’t burn.

The recipe of the day is perfect for a relaxing and lazy Sunday – Succulent Meatballs in Sweet Tomato Sauce with Parmesan & Mozzarella Cheese!
It’s so comforting and so delicious, this is definitely one of my (many) family favourites!
And it might not look that simple, but believe me it is, and the cheese, oh the cheese, puts these meatballs in a completely new level.

Here’s what you need.

Ingredients:
  • 800g/2lbs beef mince
  • 400g/1lb passata
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1tsp nutmeg
  • 1tsp cinnamon
  • 1 egg
  • 150g/5oz breadcrumbs
  • 400g/1lb Mozzarella, sliced
  • 1tbsp brown sugar
  • a handful of fresh basil leaves
  • Parmesan cheese for serving
  • salt and pepper
  • olive oil

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, combine the beef mince, seasoning, breadcrumbs, onion and garlic, and add the egg. Mix everything together and make small balls.
  3. In a heated pan with olive oil, gently sweat the meatballs for about 20 minutes. 
  4. Add the passata, mixed with the brown sugar, and leave on the hob for another 15 minutes.
  5. Remove from the hob, add the basil leaves and Mozzarella cheese. Place in the oven and cook for about 10 minutes.
  6. Grate some Parmesan cheese on top and serve with some garlic bread.

Tip: To make it even cheesier, try adding some small piece of Mozzarella into the beef mince.

Chickpea Chilli with Couscous

I’ve been trying to swap the white rice recently so I’ve been using a whole lot of different grains, couscous, seeds and whatnot.
I do like white rice, but when possible and tasty I like to use something else (healthier).
So this is what happened the other day – comforting and heart-warming chilli with beans, chickpeas and mix of pork and beef mince(oh, and lots of spices), served on a bed of couscous generously sprinkled with fresh parsley.
All you need is a big spoon to dig in.

Here’s what you need.

Ingredients:
  • 1 cup red beans, cooked
  • 1 cup chickpeas, cooked
  • 300g/10 oz beef and pork mince (mixed)
  • 300g/10z tinned tomatoes
  • 1 onion, chopped
  • 1tbsp chilli flakes
  • 1tbsp cumin
  • 1tbsp paprika
  • 1tbsp dry thyme
  • 1tsp black pepper
  • salt
  • 2tbsp oil 
  • 300g/10oz couscous, cooked
  • a bunch of fresh parsley, chopped

Preparation:
  1. In a heated pan, sweat the onions in the oil for about 5 minutes and add the mince meat.
  2. Season with all the spices, mix well and leave for about 15 minutes. 
  3. Add the chickpeas, beans and tomatoes and leave for another 10 minutes.
  4. Remove from the hob and serve on a bed of couscous and sprinkle with fresh parsley.
Enjoy!

Tip: Don’t worry if you can’t handle the chilli, just omit it.

Easy Swedish Meatballs

Are you guys from the people that go to IKEA just because of their Swedish Meatballs?
If that’s the case, you don’t have to do it anymore.
You can easily make amazingly delicious Swedish Meatballs at the comfort of your own home in just a few easy steps.
This is what I’m sharing with you today, and believe me, that recipe is a winner.
To accompany my meatballs I made some tasty mashed potatoes but the meatballs would go really well with rice too. So, whatever you prefer, let’s get cooking.

Here’s what you need.

Ingredients:
  • 500g/1lb beef and pork minced meat
  • 1 onion, chopped
  • 1 egg
  • 1tbsp nutmeg
  • 1 sliced of bread, water soaked
  • a bunch of fresh parsley, chopped
  • a knob of butter
  • 4tbsp flour
  • 1 cube beef bullion
  • salt

Preparation:
  1. In a bowl, mix the minced meat, egg, bread, onion, salt and nutmeg.
  2. Make small meatballs.
  3. Heat a frying pan with a bit of oil and gently cook the meatballs for about 10 minutes turning them over constantly.
  4. Remove from the pan and start making the gravy.
  5. Heat the pan with the butter and add the flour and beef cube. Pour in about 3 cups of water and mix until the gravy is nice and smooth. Add the meatballs back in the pan and cook for another 10 minutes.
  6. Remove from the hob and sprinkle the fresh parsley.
  7. Serve with mashed potatoes or rice.

Meaty Boston Style Beans

It was my first time making Boston Beans the other day and I must say, even though I cook more meat-free:), I absolutely loved these meaty beans.
To be honest, I’ve never heard of Boston beans before but thanks to one of my culinary books, I discovered them.
In general, I cook a lot of beans – soups, salads, stews or currys but this time I wanted to make them a bit different.
I didn’t follow the recipe precisely(in fact, I never do and sometimes I admit, I regret it) but the beans turned out so tasty. I skipped the mustard as I didn’t have any but next time I would definitely add it.
So I’m sharing this amazing comfort food recipe for all of you meat lovers!:)

Here’s what you need.

Ingredients:
  • 400/1lb black eyed beans
  • 5 bacon strips, thinly sliced
  • 3 pork shoulder steaks, thinly sliced
  • 1 onion, chopped
  • 2 cups tinned chopped tomatoes
  • 3tbsp Worcester sauce
  • 1tbsp butter
  • 2-3 bay leaves
  • 2tbsp dry thyme
  • 2tbsp paprika
  • salt

Preparation:
  1. In a pot, cover the beans with water and bring to a boil. Simmer for about 30-40 minutes until they soften.
  2. Remove the beans from the pot and instead add the butter in it. When it’s melted, add the onions, bacon and pork. 
  3. Cook for about 5 minutes and then add the beans, tomatoes and Worcester sauce. Season with salt, thyme and bay leaves and leave for another 5 minutes.
  4. Transfer the mixture in a casserole and bake in the oven for about 20 minutes or until ready.

Tip: Don’t forget to soak the beans overnight!

Fish Stew

Finally I’ve got access to my computer!
The baby’s sleeping and the keypad batteries are on!
Yes, I had an issue with my keypad today so I was unable to post the Wednesday recipes.
And you know what the issue was – I put new batteries a several times but it refused to work.
An hour ago I realised, all these times I’ve forgotten to switch the power button on.
What a mess! Well, yes, I’m a Blondie.:)
Anyway, the recipe is here now and it’s real good – Fish Stew!
I used pouting(first time using it), apparently it’s from the cod family and quite similar to it but smaller.

Here’s what you need.

Ingredients:
  • 450g/1lb pouting fillets, sliced
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 carrot, sliced
  • 3 celery sticks, sliced
  • 100g/3.5oz Kala Chana
  • 200g/7oz tinned tomatoes
  • 1/2 a cub red wine(I used Cabernet Sauvignon)
  • 3 bay leaves
  • 1tsp tarragon
  • 1tbsp butter
  • salt and pepper

Preparation:
  1. Heat a pan with the butter. Sweat the onions and garlic for a couple of minutes and add the fish. Leave for 5 minutes.
  2. Add the Kala Chana, carrots, celery, bay leaves and tarragon. Pour water enough to cover all the ingredients and then add the wine. Season with salt and pepper and mix well. 
  3. Cook for about 20 minutes, under a lid, and add the tomatoes.
  4. Leave for another 10 minutes and remove from the hob.

Tip: The best way to serve this fish stew is with lots of spelt bread to dip with!:)

Pearl Barley Chicken Soup

As I have mentioned before, I love all grains and like including them in my recipes.
The other day, I was making a chicken soup but instead of adding potatoes and other veggies I added pearl barley.
So this is the recipe of the day – Pearl Barley Chicken Soup.
I also added some chopped tomatoes and I think the result was quite satisfying – tasty, nutritious and healthy soup to feed the family.:)

Ingredients:
  • 200g/7oz pearl barley
  • 200g/7oz chicken, shredded
  • 1 onion, chopped
  • 1 carrot, sliced
  • 300g/10oz tinned tomatoes
  • 5 sprigs fresh parsley, chopped
  • 1tsp dry thyme
  • salt and pepper
Preparation:
  1. Place the chicken in a pot, cover with water and season with salt. Cook on the hob for about 20 minutes.
  2. Add the onions, carrots and barley. Simmer for another 15 minutes and then add the tomatoes. Sprinkle the dry thyme, salt and pepper. Stir gently and leave on the hob for another 5 minutes.
  3. Remove from the hob, sprinkle the fresh parsley and serve!

Tip: Why not try chicken soup with bulgur wheat or quinoa?It is so different but tasty!

Meatless Monday: Black Eyed Bean Curry

The curry series continue on Mummy’s Fast & Easy.
This time I’m sharing my black eyed bean curry I made the other day.
Black eyed beans are one of my favourite – apart from their health benefits, they’ve got sweet and nutty flavour you can’t resist.
They’re particularly good in soups, stews and curries.
This curry is really simple and budget friendly but tastes delicious – warm and earthy flavour – simply a bowl of pleasure.

Here’s what you need.

Ingredients:
  • 300g/10oz black eyed beans
  • 1 carrot, sliced
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 1 cup coconut milk
  • 2tbsp curry paste
  • 4-5 cardamom pods
  • 1tbsp sunflower oil
  • 3 sprigs fresh coriander, chopped
  • salt
Preparation:
  1. Soak the beans the previous night.
  2. Wash them, cover with water and bring to a boil. Simmer for 15-20 minutes.
  3. Change the water and bring to a boil again. Add the onions, garlic and carrots. Cook for another 10 minutes.
  4. Stir in the curry paste, oil and coconut milk. Season with salt and the cardamom pods. 
  5. Simmer for another 15-20 minutes and remove from the hob.
  6. Sprinkle the fresh coriander and serve hot!

Tip: Why not make a bean curry, mixing different beans – like black eyed and canellini beans?:)
