Happy Meatless Monday guys!

I’ve got a lovely recipe today! I admit it, I’ve never tried it before, and I wish I had.
It took me five minutes to prep it and another 20 to cook, it’s very simple and uses only a few ingredients but the taste is amazing.
I had broccoli in my fridge for quite a long time so it was time to make something of it, I really had no idea what to do with them but hen I saw the mozzarella….and I knew it – Cheesy Broccoli Bake was on the daily menu!

Here’s what you need.

Ingredients:
  • 1 broccoli(mine was quite big)
  • 400g/1lb Mozzarella, sliced
  • 200g/7oz mild Cheddar Cheese, grated
  • 100g/3.5oz butter
  • 150g/5oz cherry tomatoes
  • olive oil for drizzling
  • salt and pepper
  • fresh parsley, if wished

Preparation:
  1. Work the broccoli in a food processor.
  2. Combine with the Cheddar Cheese and butter and place in a greased baking tray. Drizzle some olive oil and place in the oven.
  3. Cook for about 15 minutes. Take out from the oven and arrange the Mozzarella slices and cherry tomatoes. Place back and cook for another 5 minutes.
  4. Sprinkle some fresh parsley when serving.

Tip: For meat lovers – simply add some finely chopped bacon into the broccoli mixture!
