Happy Meatless Monday guys!

Another week has started and it’s going to be, apparently, another rainy week. But to make things look brighter and delicious here are my recipes:)

But before introducing the recipe of the day I just wanted to point out that I have mistakenly posted a vegetarian recipe(or I thought so at the moment) a couple of weeks ago not realising I have actually added tuna to it. I hope nobody felt offended, I do apologise, I’ll try to be more concentrated in the future. Let ‘s just put it this way – it’s all due to my ‘pregnancy brain’ ! But that’s another topic.

The recipe of the day is quick and  packed with vitamins salad – Carrots, apples, seeds and a bit of Feta Cheese. It’s crunchy, it’s flavoursome and it’s just delicious!

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 3-4 carrots, grated
  • 2 apples, grated (I used Pink Lady, I love the sweet and sour flavour)
  • 150g/5oz Feta cheese, crumbled
  • 100g/3.5oz mixture of chilli seeds ( I used Munchy seeds which I absolutely love)
  • fresh parsley, chopped(if wished
For the dressing:
  • 2tbsp olive oil
  • 1tbsp lemon juice
  • salt

Preparation:
  1. In a bowl, combine the carrots and apples and mix well. Stir in the dressing ingredients.
  2. Add the chilli seeds and crumbled cheese.
  3. If wished, throw in some parsley leaves.

Tip: Why not try adding some grated beetroot!
