Buffalo Mozzarella, Tuna & Corn Jacket Potatoes

Happy Monday guys!
The recipe of the day is super simple but I often make it at home so I thought I might share it with you.
What I like about it is that you can prep it in advance. You can bake a few potatoes and store them in the fridge. Whenever you’re busy(or maybe just a bit lazy), take them out, fill them out with goodies, and enjoy!
I used some Buffalo Mozzarella, tuna and corn. Nothing requires cooking so this really makes your busy life much easier.

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 4-5 baked potatoes
  • 300g/10oz buffalo mozzarella
  • 200g/7oz tinned corn
  • 200g/7oz tinned tuna
  • 1tbsp butter
  • salt

Preparation:
  1. Make crosses on the potatoes, add a bit of butter and heat them up for a few minutes(either in the oven or microwave).
  2. Add the mozzarella, tuna and corn and season with salt to taste. If wished, put in the oven for a few more minutes.

Tip: These are actually really good with just a bit of butter and seasoning!
