Mummy’s Fast & Easy

I can’t believe I have just recently discovered halloumi cheese. 
I mean, it’s so good it’s a shame I haven’t cooked with it earlier.
Anyway, now I know how grilled halloumi tastes I’m sure I’ll be making more recipes with it.

Today’s recipe is very nutritious and healthy salad with quinoa, grilled baby peppers, rocket salad, raisins and of course, grilled halloumi cheese. The dressing consists of olive oil, balsamic vinegar and salt. Simple as that! But very delicious.

Here’s what you need.
 
Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz halloumi cheese, grilled
  • 5-6 sweet baby peppers, grilled
  • 200g/7oz baby leaf & rocket salad
  • 150g/5oz quinoa, cooked
  • a handful of raisins
For the dressing:
  • 2tbsp olive oil
  • 1tbsp balsamic vinegar
  • salt

Preparation:
  1. In a salad bowl, layer the rocket salad and quinoa.
  2. Arrange the grilled peppers and grilled halloumi on top. Sprinkle the raisins.
  3. Mix the dressing ingredients and pour over the salad.

Tip: Try adding a tbsp of honey in the dressing! Goes really well with the cheese.
