Baked Haddock Fillet with Citrus Salsa

It’s finally the weekend and it’s going to be a long one!

Today’s recipe is quick and easy, delicious and different!
I felt I needed to try different ways to prepare fish as I was kind of stuck to one recipe I repeated every week.

So I tried this – Haddock fillet with Citrus Salsa, and we all absolutely loved it. I think I found another recipe I’ll be repeating weekly! And I can’t tell you how simple it is.

Here’s what you need.

Mummy’s Fast & Easy

  • 400g/1lb boneless haddock fillet
  • 1 tomato, finely chopped
  • 2 tangerines, finely chopped
  • 2tbsp olive oil
  • salt and pepper
  • lemon for serving

  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, make the salsa, add the tomato and tangerine, season with salt and pepper, drizzle live oil and mix well.
  3. Place the fish on a greased baking tray and layer the salsa on top. Drizzle a bit more olive oil
  4. Bake the fish for about 20 minutes or until ready.
  5. Serve with some lemon slices.

Tip: To heat up things, why not add some chopped jalapenos to the salsa!
