Mummy’s Fast & Easy

I hope you guys are enjoying your Wednesday so far. It’s been really nice and sunny here in London so it inevitably makes me think of the Spring.
I do hope it comes soon cause I really had enough of this cold and dull weather.
On the bright side, here’s a hearty couscous salad/side/main dish – packed with veggies, bits of naughty bacon and kale on a side.
How did I come up with the idea – well, I had only couscous, some bacon and veggies and had to be creative.
So, yes, here’s what happens when bacon meets couscous.
I can definitely say it was a very tasty meeting!

Here’s what you need.

Mummy’s Fast & Easy

Ingredients:
  • 200g/7oz couscous, cooked
  • 5-6 bacon strips, finely chopped and cooked
  • 1/2 a cup frozen corn
  • 1/2 a cup frozen peas
  • 3tbsp olive oil
  • a handful of fresh parsley, chopped
  • a handful of kale
  • salt

Preparation:
  1. In a bowl cover the corn and peas with hot water until soft(usually about 5 minute).
  2. Add the couscous and bacon and mix well.
  3. Season with salt and stir in the olive oil, sprinkle the fresh parsley.
  4. Serve with some kale on a side.

Tip: If it’s your healthy day sub the bacon with some yummy grilled chicken or just go meat free!
