Meatless Monday: Roasted Red Peppers, Feta Cheese & Walnut Dip

Meatless Monday recipe of the day is Roasted Red Pepper Dip with Feta Cheese & Walnuts.
It’s really good with cucumber, carrots or on Ryvita crispbread that I’ve been snacking on a lot recently.
Also, I realised it tastes good in pastas, too. May be just add some basil. Oh, and in pitas, sandwiches or wraps!
Really, it’s good on everything and with everything.
And it takes a minute to blend the ingredients.

Here’s what you need.

  • 400g/1lb red roasted peppers
  • 200g/7oz feta cheese
  • 150g/5oz walnuts
  • 3tbsp olive oil
  • salt

  1. In a bowl, combine all the ingredients and work them with a hand processor until a smooth consistency.
  2. Serve on a cucumber slices or crispbread.
  3. If wished, add some chopped parsley.

Tip: Why not try adding some celery into the pepper mix!
