Happy Monday guys!
Today’s recipe is the simplest, tastiest and healthiest breakfast alternative I’ve made – Goji Berry, Coconut and Almond bars.
These are great as a breakfast alternative or at any time of the day to power you up, or recently I’ve been using them as a topping for my porridge.
What’s more you ca wrap them nicely in a Christmas paper, label them and give them away as gifts.
Who wouldn’t love a tasty treat for Christmas?

Here’s what you need.
Mummy’s Fast & Easy

Ingredients:
  • 100g/3.5oz goji berries
  • 100g/3.5oz raw almonds, grated
  • 200g/7oz coconut, grated
  • 3tbsp honey
  • 1tbsp cinnamon, if wished

Preparation:
  1. Preheat the oven to 200°C/392°F.
  2. In a bowl, mix all the ingredients together.
  3. Empty the mixture in a greased baking tray and bake in the oven for about 15 minutes or until it’s nice and firm.
  4. Cut it into pieces.
Enjoy!

Tip: Why not make your own muesli – just add some oats and milk and enjoy!
