Ham, Eggs & Kale Bake

I had kale left from the Kale & Grilled Cheese Sandwiches I made the other day so I had to use it.
I’ve always wanted to make small cups of ham, eggs and cheese so I decided I’ll give it a go.
Well, these are definitely not cups but they turned out to be another quick and easy delight.
I love recipes like these  – just toss the ingredients, bake and eat.
Amazing, isn’t it?
I think this will now be one of our favourite brunch recipes.
It is so perfect for a lazy Sunday morning when you just want to stay in bed and enjoy a nice cup of coffee/tea.

Here’s what you need.

Mummy’s Fast & Easy

  • 5 eggs
  • 5 thick slices of ham
  • 5 Cheddar slices
  • a handful of kale
  • salt and pepper

  1. Preheat the oven to 200°C/394°F.
  2. Grease a baking tray and start arranging the ingredients in the following order – ham, cheese, kale and egg. 
  3. Repeat with the rest.
  4. Bake in the oven for about 5-10 minutes depending on how you like your eggs cooked.

Tip: Serve with some grilled cherry tomatoes for a perfect finish!
