For the Pumpkin:
- 1 medium pumpkin (about 1.2β1.5 kg)
- 1 tbsp olive oil

- Preheat the oven to 190Β°C (375Β°F).
- Slice off the top of the pumpkin like a lid and set aside.
- Scoop out the seeds and stringy bits, then scrape out some of the flesh and set the pulp aside.
- Rub the inside with olive oil, salt, and pepper.
- Place the pumpkin (and lid) on a baking tray and roast for 25β30 minutes until just tender but still holding shape.
