Pork Ramen Soup

Ingredients:

  • 500g pork fillet, trimmed of fat
  • 1 large onion, halved
  • 4 cloves garlic, smashed
  • 2-inch piece of ginger, sliced
  • 4 green onions, chopped
  • 1tbsp honey
  • 2tbsp soy sauce
  • 1tbsp sesame oil
  • 2tbsp miso paste
  • 2tsp Chinese 5 spice
  • 200g Shiitake mushrooms, sliced
  • 25g fresh ginger, finely sliced
  • 900ml hot chicken stock
  • salt and pepper to taste
  • Udon noodles (enough for serving)
  • Soft-boiled eggs, halved
  • Pak choi, blanched
  • Sesame seeds and chopped green onions for garnish
Pork Ramen Soup

Instructions:

  1. In a bowl, mix the soy sauce, 5 spice & honey. Cut the pork halfway ad gently coat into the mixture.
  2. Heat a pan with the sesame oil and gently cook the pork pieces, 3-4 minutes on each side. Remove from the pan and let aside to rest.
  3. Put the miso, garlic & ginger in a pot. Add the chicken stock, Shiitake mushrooms & green onions. Cover and cook for an hour at medium heat.
  4. Meanwhile, cook the Udon noodles according to package instructions. Drain and set aside. Soft-boil the eggs, peel them, and cut them in half.
  5. To serve – blanch the pak choi in hot water for a minute, then drain and set aside. Divide the cooked ramen noodles among serving bowls. Ladle the hot pork broth over the noodles, ensuring they are fully submerged. Arrange slices of pork, add the soft-boiled egg halves & pak choi to each bowl.
  6. Sprinkle sesame seeds, and chopped green onions over each bowl for added flavour and visual appeal.
  7. Serve the Homemade Pork Ramen Soup hot, inviting everyone to customize their bowls with additional soy sauce or other condiments as desired.
