Savoury Croissants with Smoked Salmon & Scrambled Eggs

The Ingredients

No doubt smoked salmon and eggs is a classic but try stuffing a butter croissant with it and adding a few slices of ripe avocado. It’s a divine combination! If you haven’t tried it yet, I suggest you do so. It’s a really simple recipe and it uses only a few ingredients. See below.

What you need:

  • butter croissants
  • smoked salmon
  • eggs
  • avocado
  • salt and pepper
  • olive oil
  • hot sauce, if wished

Savoury Croissants with Smoked Salmon & Scrambled Eggs

Here’s how to make these scrumptious Savoury Croissants with Smoked salmon & Scrambled Eggs

Ingredients:

  • 2 all butter croissants, sliced in halves
  • 2 eggs
  • 120g smoked salmon
  • 1/2 avocado, sliced
  • 1-2tsp olive oil
  • salt and pepper to taste

Preparation:

  • Heat a pan wit the olive oil and gently scramble the eggs for a couple of minutes. Season with salt and pepper and set aside.
  • I’d normally grill the croissants but I had request not to (from the little people) so I left them as they were.
  • To build the Savoury croissants, start by adding the smoked salmon, make sure to divide it equally between the two croissants. Add the scrambled eggs and finish with the avocado slices on top. Add the top bit of the croissant and serve.
  • To serve, add some hot sauce, if wished. Also, to make the perfect brunch, add some seasonal fruit ( I used cherries) other bits and pieces you fancy, coffee, freshly squeezed juice or other drinks.
